  • 1 lb ground beef (80/20 works best)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning (McCormick or homemade)
  • 1/4 cup water
  • Salt and black pepper to taste
  • 1 large bag restaurant-style tortilla chips (1316 oz)
  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
  • 1 can (15 oz) refried beans (optional)
  • 1 cup cherry tomatoes, diced (or 2 Roma tomatoes)
  • 1 avocado, diced (or guacamole with 2 avocados, lime juice, salt)
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapeรฑos
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1/2 cup pico de gallo (optional)
  • 1/4 cup crumbled queso fresco (optional)
  • Hot sauce (Cholula or Tapatรญo, optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a large baking sheet with aluminum foil or parchment paper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.
  3. Add the ground beef and break it up with a spatula. Cook for 5-7 minutes until browned, stirring occasionally. Drain excess fat, leaving about 1 tablespoon.
  4. Reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant. Sprinkle taco seasoning over the beef, add 1/4 cup water, and stir. Simmer for 2-3 minutes until thickened. Season with salt and pepper.
  5. Spread half the tortilla chips in an even layer on the prepared baking sheet. If using refried beans, warm them for 30 seconds in the microwave, then drop small spoonfuls over the chips.
  6. Spoon half the seasoned beef over the chips. Sprinkle 1 cup of shredded cheese over everything.
  7. Add the remaining chips on top. Add the rest of the beef, then sprinkle the remaining 1 cup of cheese.
  8. Bake for 8-10 minutes, until the cheese is fully melted and bubbly.
  9. Remove from the oven. Immediately sprinkle diced tomatoes, black olives, and pickled jalapeรฑos over the top.
  10. Dollop sour cream across the board. Add diced avocado or guacamole. Sprinkle fresh cilantro. Arrange lime wedges around the edges.
  11. Serve immediately with small plates and napkins.

Notes

Shred your own cheese for best melting. Use sturdy chips like Tostitos Scoops. Don’t overload chips; stick to two layers. Warm sour cream to room temperature before serving. Prep all toppings beforehand for quick assembly.
