  • 1/2 teaspoon black pepper
  • 1 (4-ounce) can diced green chiles, drained
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk (or 2%)
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 4 ounces cream cheese, softened and cut into cubes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1 large tomato, seeded and diced
  • 2 green onions, sliced
  • 1/2 cup pickled jalapeño slices, drained
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 large bag tortilla chips (restaurant-style)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until nicely browned (6-8 minutes).
  3. Push the beef to one side. Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef mixture. Stir and cook for 1 minute. Add the drained green chiles and stir to combine. Remove from heat.
  5. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly pour in the milk while whisking constantly. Cook for 2-3 minutes until thickened.
  6. Reduce heat to low. Add the shredded cheddar cheese and cream cheese cubes, a handful at a time, stirring until each addition is melted. Stir in garlic powder and cayenne (if using).
  7. Spread the seasoned beef mixture evenly in a 9×13-inch baking dish. Sprinkle the black beans and corn over the beef. Pour the cheese sauce over the top, spreading gently.
  8. Bake for 15 minutes until hot and bubbly. For a golden top, switch to broil for the last 2 minutes, watching closely.
  9. Remove from oven and let rest for 5 minutes. Sprinkle with diced tomato, sliced green onions, pickled jalapeños, and fresh cilantro. Drizzle with sour cream.
