  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano

  • ½ teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 4 cups low-sodium chicken or beef broth
  • 8 ounces dried lasagna noodles, broken into 2-inch pieces
  • ½ cup heavy cream or whole milk (optional)
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese (low-moisture, whole milk)
  • ½ cup ricotta cheese (full fat)
  • ¼ cup grated Parmesan cheese (freshly grated)
  • 2 tablespoons fresh parsley or basil, chopped (for garnish)

Instructions

  1. Brown the beef: Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it apart, until browned all the way through, about 6 to 8 minutes. Leave about a tablespoon of fat in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion and cook until soft and translucent, about 4 minutes. Stir in the minced garlic, oregano, basil, and red pepper flakes. Cook for 30 seconds until fragrant.
  3. Add the tomatoes and broth: Pour in the crushed tomatoes, diced tomatoes with their juices, and the broth. Stir, scraping the bottom of the pot to release any browned bits.
  4. Simmer the soup base: Bring the soup to a boil, then reduce heat to low and let it simmer uncovered for 10 minutes.
  5. Cook the pasta: Stir in the broken lasagna noodles, ensuring they are fully submerged. Cover the pot and simmer for 10 to 12 minutes, stirring once halfway through, until the pasta is tender but not mushy. If the soup gets too thick, add a splash of broth or water.
  6. Finish with cream (optional): If using heavy cream or milk, stir it in and let it heat through for 1 to 2 minutes. Taste and adjust salt and pepper.
  7. Make the cheesy topping: While the soup simmers, mix the ricotta, mozzarella, and Parmesan in a small bowl. Set aside at room temperature.
  8. Serve immediately: Ladle the soup into bowls. Drop a generous dollop of the cheese mixture on top. Sprinkle with fresh parsley or basil and serve with crusty bread.

Notes

Don’t overcook the pasta; it will continue to soften in the hot broth. If making ahead, cook pasta separately and add to each bowl when serving. For freezing, freeze the soup base without the pasta. The flavors deepen overnight, making leftovers even better.
