  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon vegetable oil or neutral oil
  • 3 tablespoons soy sauce (low sodium recommended)
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon freshly grated ginger (extra for sauce)
  • Optional: 1 teaspoon chili flakes or gochujang
  • 2 cups cooked jasmine or short-grain rice
  • 2 green onions, sliced thin
  • 1 tablespoon toasted sesame seeds
  • Optional: steamed or sautéed veggies like broccoli, carrots, or snap peas

Instructions

  1. Cook 2 cups of jasmine or short-grain rice according to package instructions (about 15-20 minutes).
  2. In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon brown sugar, 1 tablespoon rice vinegar, 1 tablespoon toasted sesame oil, 1 teaspoon freshly grated ginger, and chili flakes if using. Set aside.
  3. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add minced garlic and grated ginger, cooking for about 30 seconds until fragrant but not browned.
  4. Add 1 lb lean ground beef to the skillet. Break it up with a spatula and cook for about 5-7 minutes until browned and no longer pink. Drain excess fat if needed.
  5. Pour the sesame ginger sauce over the cooked beef. Stir well and cook for another 2-3 minutes until the sauce thickens and coats the meat.
  6. While the beef simmers, slice 2 green onions thinly and toast 1 tablespoon sesame seeds in a dry pan over medium heat for about 2 minutes, stirring constantly.
  7. Spoon warm rice into bowls, top with the saucy ground beef, sprinkle with green onions and toasted sesame seeds. Add any steamed or sautéed veggies if desired.
  8. Optional: Drizzle a little extra toasted sesame oil or a squeeze of lime over the bowl before serving.

Notes

Do not overcrowd the pan when browning beef to get a caramelized crust. Use fresh ginger for best flavor. Toast sesame seeds carefully to avoid burning. Adjust sauce sweetness or acidity to taste. Leftovers reheat well with a splash of water to keep rice moist.
