Ingredients

Scale
  • 1/4 cup (60 ml) heavy cream, cold
  • 1/2 cup (120 ml) milk (whole, oat, or almond)
  • 2 tablespoons (30 g) pumpkin purée (not pumpkin pie filling)
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (15 ml) maple syrup
  • 1 cup (240 ml) strong brewed coffee or cold brew concentrate, chilled
  • Ice cubes

Instructions

  1. Chill your cream: Place heavy cream in the freezer for 5 minutes before starting.
  2. Brew your coffee: Make 1 cup (240 ml) of strong coffee or cold brew concentrate and let it cool completely. (Can be made the night before and refrigerated.)
  3. Combine foam ingredients: In a small mixing bowl, combine chilled heavy cream, milk, pumpkin purée, pumpkin pie spice, vanilla extract, and maple syrup. Whisk gently to combine.
  4. Froth until thick: Using a milk frother, blend the mixture for 30-45 seconds until thick and creamy, with soft peaks forming.
  5. Fill your glass with ice: Pack a tall glass with ice cubes.
  6. Pour the coffee: Slowly pour chilled coffee over the ice, filling the glass about 3/4 full.
  7. Add the foam: Gently spoon the pumpkin cream cold foam over the back of a spoon onto the coffee to help it float.
  8. Finish with a sprinkle: Dust extra pumpkin pie spice or cinnamon on top.
  9. Serve immediately: Enjoy while the foam is still thick and the coffee is cold.

Notes

For best results, ensure all ingredients are cold. Chill the cream in the freezer for 5 minutes before frothing. Do not over-froth to avoid butter formation. Use the back of a spoon to layer foam on coffee for a beautiful presentation. The unfrothed pumpkin cream mixture can be stored in the fridge for up to 3 days; re-froth before serving. For a dairy-free version, use full-fat coconut cream and oat milk.
