  • 2 lbs (900g) bone-in, skin-on chicken thighs
  • 4 tbsp (56g) unsalted butter
  • 8 cloves garlic, minced
  • 1/2 cup (120 ml) low-sodium chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 2 tbsp (30 ml) fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 tbsp (15 ml) olive oil

Instructions

  1. Pat chicken thighs dry with paper towels. Season generously on both sides with salt, pepper, paprika, and dried thyme.
  2. Heat olive oil in a large cast iron skillet over medium-high heat. Place chicken skin-side down and cook undisturbed for 6-7 minutes until deep golden brown. Flip and cook another 5-6 minutes until internal temperature reaches 165°F (74°C). Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and stir constantly for about 30 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the pan with a wooden spoon. Let simmer for about 1 minute.
  5. Reduce heat to low and stir in heavy cream. Simmer gently for 2-3 minutes until sauce thickens. Stir in lemon juice and adjust salt and pepper to taste.
  6. Return chicken to the skillet, spooning sauce over each piece. Warm through for 2 minutes. Sprinkle with fresh parsley and serve immediately.

Notes

For best results, don’t move the chicken too soon; let it form a crust. Control heat to avoid burning garlic or curdling cream. Prep all ingredients before starting. Let chicken rest after searing. Scrape pan well to incorporate browned bits.
