  • 4 cups (600g) frozen strawberries
  • 1 cup (240ml) fresh lemon juice (about 46 lemons)
  • 3/4 cup (150g) sugar (can substitute honey or agave syrup)
  • 2 cups (480ml) cold water
  • 1 to 2 cups (240-480ml) sparkling water
  • 1 cup (240g) ice cubes

Instructions

  1. Roll lemons on the counter to loosen juice, cut in half and squeeze to get 1 cup (240ml) fresh lemon juice. Strain if desired. (About 5 minutes)
  2. In a blender, combine frozen strawberries, fresh lemon juice, sugar, and cold water. Blend on high until smooth and creamy, about 1-2 minutes. Add more water if too thick.
  3. Add ice cubes to the blender and pulse a few times to slightly crush them without melting completely.
  4. Transfer the blended mixture to a large pitcher. Gently stir in 1 to 2 cups (240-480ml) sparkling water to desired fizz level.
  5. Chill the punch in the refrigerator for about 10 minutes or serve immediately over extra ice cubes. Garnish with lemon slices or fresh mint if desired.

Notes

Use frozen fruit straight from the freezer for best icy texture. Do not over-blend ice to avoid dilution. Fresh lemon juice is preferred over bottled. Adjust sweetness gradually. Chill serving pitcher for longer-lasting cold punch. Add sparkling water just before serving to keep fizz.
