A quick and refreshing no-bake Caprese skewer recipe featuring fresh mozzarella, ripe tomatoes, and basil, perfect for summer snacks and gatherings.

Ingredients

  • Fresh mozzarella balls (bocconcini or ciliegine)
  • Cherry or grape tomatoes
  • Fresh basil leaves
  • Extra virgin olive oil
  • Balsamic glaze or reduction
  • Sea salt
  • Freshly cracked black pepper
  • Toothpicks or small skewers (or rosemary sprigs, bamboo picks)

Instructions

  1. Rinse cherry tomatoes and basil leaves under cold water. Pat dry gently with a kitchen towel to avoid sogginess.
  2. Optional: Marinate the mozzarella balls in a mixing bowl with 2 tablespoons extra virgin olive oil, 1 minced garlic clove, and a pinch of Italian seasoning for 30 minutes.
  3. On each toothpick or skewer, thread one cherry tomato, one fresh basil leaf folded in half, and one mozzarella ball. Repeat until desired number of skewers is assembled.
  4. Arrange the skewers on a serving platter. Sprinkle lightly with sea salt and freshly cracked black pepper.
  5. Drizzle balsamic glaze over the skewers, followed by a little extra virgin olive oil for a glossy finish.
  6. Serve immediately or chill in the refrigerator for 10-15 minutes to let flavors mingle. Remove from fridge 10-15 minutes before serving if chilled.

Notes

Dry ingredients thoroughly to avoid soggy skewers. Marinate mozzarella for extra flavor but it is optional. Use firm tomatoes to prevent skewers from falling apart. Drizzle balsamic glaze last to avoid slipperiness. Serve fresh or slightly chilled. Leftovers keep up to 24 hours refrigerated but basil will darken.
