These Easy Freezer-Friendly Mini Pizza Bagel Bites are everything you want from a childhood favorite: crispy on the bottom, chewy on top, loaded with real cheese and pepperoni, and they freeze like a dream. Perfect for quick snacks, game day appetizers, or whenever nostalgia hits.

  • 12 mini bagels (such as Thomas’ Mini Bagels)
  • 1/2 cup pizza sauce (such as Rao’s Homemade)
  • 1 1/2 cups shredded mozzarella cheese (freshly shredded preferred)
  • 1/2 cup mini pepperoni (or regular pepperoni, cut into quarters)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Split the mini bagels in half using a serrated knife if they aren’t pre-split. Place them cut-side up on the prepared baking sheet. You should have 24 halves total.
  3. In a small bowl, mix 2 tablespoons melted butter with 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, and 1/4 teaspoon salt. Stir until combined.
  4. Brush the cut sides of each bagel half with the butter mixture.
  5. Spoon about 1 teaspoon of pizza sauce onto each bagel half. Spread it gently with the back of the spoon, leaving a tiny border around the edge.
  6. Sprinkle shredded mozzarella cheese over each bagel half, using about 1 tablespoon per bagel half.
  7. Top with mini pepperoni — about 3 to 4 per bagel half.
  8. Bake for 12 to 15 minutes, or until the cheese is bubbly and golden and the edges of the bagels are crispy.
  9. Remove from the oven and let them cool on the baking sheet for 2 to 3 minutes. Then transfer to a cooling rack if desired, or serve straight from the pan.
  10. For freezing: Let the bagel bites cool completely on a cooling rack. Arrange them in a single layer on a baking sheet and freeze for 1 to 2 hours, or until solid. Transfer to a freezer-safe zip-top bag or airtight container. They’ll keep for up to 3 months.

Notes

Don’t over-sauce the bagels to prevent sogginess. For extra crunch, toast the bagel halves for 2-3 minutes before adding toppings. Use room temperature cheese for even melting. For air fryer, cook at 350°F (175°C) for 8-10 minutes. Flash-freeze before storing to prevent sticking.
