  • 1 tsp ground cinnamon
  • 1/2 cup all-purpose flour (60g)
  • 3/4 cup old-fashioned rolled oats (75g)
  • 1/3 cup packed brown sugar (65g)
  • 6 tbsp unsalted butter, cold and diced (85g)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Pinch of salt
  • Optional: 1/4 cup chopped nuts (pecans or walnuts, 30g)
  • Optional: Pinch of ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Optionally line the baking dish with parchment paper for easy cleanup.
  2. In a mixing bowl, combine peeled and sliced peaches with granulated sugar, lemon juice, ground cinnamon, all-purpose flour, salt, and vanilla extract. Toss gently to coat evenly.
  3. Transfer the peach mixture to a 9×9-inch baking dish, spreading evenly.
  4. In a separate bowl, mix rolled oats, brown sugar, salt, and optional nutmeg. Add cold diced butter and cut into the mixture using a pastry cutter or forks until coarse crumbs form. Stir in optional chopped nuts if using.
  5. Sprinkle the oat topping evenly over the peach filling without pressing down.
  6. Bake uncovered for 35 to 40 minutes until the topping is golden brown and crisp and peach juices are bubbling. Tent with foil if topping browns too quickly.
  7. Let the crisp cool for at least 10 minutes before serving to thicken the juices. Serve warm, ideally with vanilla ice cream or whipped cream.

Keep the butter cold when mixing the topping to ensure a crunchy texture. Peel peaches by blanching in boiling water for 30 seconds then plunging into ice water for easy skin removal.
