  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 6 slices thick-cut bacon, chopped into 1-inch pieces
  • 3 tablespoons pure maple syrup
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Rinse Brussels sprouts under cold water and pat completely dry. Trim tough stem ends, remove yellow leaves, and cut each sprout in half lengthwise. Quarter any larger sprouts.
  3. In a small bowl, whisk together maple syrup, balsamic vinegar (if using), and a pinch of salt. Set aside.
  4. In a large mixing bowl, combine halved Brussels sprouts, chopped bacon, olive oil, salt, and pepper. Toss with hands to coat evenly.
  5. Spread Brussels sprouts and bacon in a single layer on the prepared baking sheet, cut-side down if possible.
  6. Roast for 20 minutes without stirring.
  7. Remove pan from oven. Drizzle maple syrup mixture over sprouts and toss gently with a spatula. Spread back into a single layer.
  8. Return to oven and roast for another 10-15 minutes, until sprouts are tender and caramelized and bacon is crispy. Check at 10 minutes to avoid burning.
  9. Remove from oven and let cool on pan for 2-3 minutes. Taste and adjust seasoning if needed. Serve warm.

Notes

Don’t overcrowd the pan; use two pans if needed. Pat sprouts dry to ensure crispiness. Add maple syrup halfway through to prevent burning. Watch the last few minutes closely as the syrup can burn quickly. Let the pan rest for a couple minutes after roasting to continue crisping.
