  • 1 whole head of garlic (roasted until soft)
  • 2 raw garlic cloves (minced)
  • 8 ounces (226g) full-fat cream cheese, softened
  • 1 cup (100g) freshly grated parmesan cheese
  • 2 cups (about 300g) cooked, shredded chicken
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) heavy cream
  • 1 tablespoon (15ml) olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ cup (25g) panko breadcrumbs
  • 1 tablespoon melted butter
  • 2 tablespoons chopped fresh parsley (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap tightly in foil, and roast for 30-35 minutes until soft and golden. Let cool, then squeeze out the roasted garlic and mash into a paste.
  2. While garlic roasts, shred the cooked chicken into small, bite-sized pieces.
  3. In a medium bowl, combine softened cream cheese, sour cream, heavy cream, and roasted garlic paste. Mix until smooth.
  4. Stir in shredded chicken, ¾ cup grated parmesan (reserve ¼ cup for topping), minced raw garlic, salt, pepper, and smoked paprika. Mix until evenly distributed.
  5. Transfer mixture to an 8×8-inch baking dish and spread into an even layer.
  6. In a small bowl, mix panko breadcrumbs with melted butter and remaining ¼ cup parmesan. Sprinkle evenly over the dip.
  7. Bake at 400°F (200°C) for 20-25 minutes until hot and bubbly, and topping is golden brown. If topping browns too quickly, tent with foil.
  8. Remove from oven and let rest for 5 minutes. Garnish with parsley and red pepper flakes if desired. Serve warm with chips, crackers, or veggie sticks.

Notes

Roast garlic until soft but not burnt to avoid bitterness. Use room temperature cream cheese for smooth texture. Don’t overmix chicken to keep distinct shreds. Watch the topping in the last 5 minutes to prevent burning. Dip can be assembled (without topping) up to 24 hours ahead; add topping before baking and add 5 extra minutes if cold.
