  • 2 medium delicata squash (about 1½ pounds total)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ⅓ cup grated Parmesan cheese, plus more for serving

Instructions

  1. Preheat your oven to 425°F (220°C) with the rack in the middle position.
  2. Line a large rimmed baking sheet with parchment paper or a silicone mat.
  3. Wash and dry the delicata squash. Trim off the tip and stem end, then slice crosswise into ½-inch thick rings.
  4. Place the squash rings in a large mixing bowl. Drizzle with olive oil, salt, and pepper. Use your hands to toss and coat evenly.
  5. Arrange the rings in a single layer on the prepared baking sheet, leaving space between them.
  6. Sprinkle the grated Parmesan evenly over the squash rings.
  7. Roast for 20-25 minutes, rotating the pan halfway through, until edges are golden and crispy and squash is tender.
  8. Let rest on the pan for 2 minutes, then transfer to a serving platter. Sprinkle with extra Parmesan and flaky sea salt if desired. Serve hot.

Notes

For best results, use real Parmesan grated from a wedge (not pre-shredded). Don’t overcrowd the pan to ensure caramelization. The seeds can be left in—they roast crispy and delicious. Optional additions: red pepper flakes for heat, lemon juice for brightness, or fresh herbs like thyme or rosemary.
