Instructions

  1. In a small bowl, whisk together the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract until fully incorporated.
  2. Add the instant coffee granules to the wet mixture and whisk until completely dissolved.
  3. Sprinkle in the pumpkin pie spice, cinnamon, and salt. Whisk again until combined.
  4. In a mason jar or airtight container, add the rolled oats. Pour the wet mixture over the oats and stir until every oat is coated.
  5. Seal the container and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. If too thin, let sit for another hour.

Notes
