Quick and easy cheese quesadilla roll-ups that take just five minutes from start to finish. Perfect for lunchboxes or a fast, kid-friendly meal.

  • 4 (8-inch) flour tortillas
  • 1 cup shredded cheddar cheese (about 1/4 cup per tortilla)
  • 4 teaspoons butter or oil (1 teaspoon per tortilla, optional)
  • Optional: 2 tablespoons refried beans per tortilla
  • Optional: 2 tablespoons shredded cooked chicken per tortilla
  • Optional: 1 tablespoon black beans (rinsed and drained) per tortilla
  • Optional: 1 tablespoon corn kernels per tortilla
  • Optional: 1 handful fresh spinach (finely chopped) per tortilla
  • Optional: 1 tablespoon mild salsa or pico de gallo per tortilla

Instructions

  1. Lay one flour tortilla flat on a clean cutting board or plate. If tortillas are stiff, microwave for about 10 seconds to make them more flexible.
  2. Sprinkle about 1/4 cup (30 grams) of shredded cheddar cheese evenly over the entire surface of the tortilla, leaving a half-inch border around the edges.
  3. If using optional fillings (beans, chicken, spinach, corn, or salsa), spread or sprinkle them evenly over the cheese. Do not overfill.
  4. Starting from one edge, roll the tortilla tightly into a log shape, keeping the roll firm but gentle. Place seam-side down.
  5. Heat a non-stick skillet over medium heat for about 30 seconds. Add 1 teaspoon of butter or oil and let it melt, swirling to coat the pan.
  6. Place the rolled tortilla seam-side down in the pan. Cook for 2 to 3 minutes until the bottom is golden brown and crispy.
  7. Carefully flip the roll-up and cook for another 2 to 3 minutes until the other side is golden brown and the cheese is completely melted.
  8. Transfer the cooked roll-up to a cutting board and let it rest for 60 to 90 seconds.
  9. Using a sharp serrated knife, slice the roll-up into 1-inch thick pieces (about 4 to 5 pieces per tortilla). Use a gentle sawing motion.
  10. Arrange the pinwheels on a plate with cut sides facing up. Repeat with remaining tortillas, wiping the pan clean between batches.

Notes

Let the roll-ups rest for 60 to 90 seconds after cooking before slicing to prevent cheese from oozing out. Use a serrated knife for clean slices. Warm tortillas if they are cold to prevent cracking. Do not overfill the tortillas. For best results, use medium heat to avoid burning the outside before the cheese melts.
