Easy Buffalo Chicken Dip in a Pumpkin Bread Bowl

A quick and easy weeknight dinner featuring creamy, spicy buffalo chicken dip baked inside a sugar pumpkin. The pumpkin softens as it bakes, adding a subtle sweetness that balances the heat, and you can eat the bowl too!

  • 1 medium sugar pumpkin (about 3–4 pounds)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 2 cups shredded cooked chicken (rotisserie or canned, drained)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Prepare the pumpkin: Using a sharp knife, cut a circle around the stem (2-3 inches in diameter), angling the knife inward slightly. Remove the top and set aside. Scoop out seeds and stringy pulp with a large spoon. Rinse inside if needed and pat dry. Lightly sprinkle the inside with salt and pepper.
  3. Brush the outside of the pumpkin with olive oil.
  4. Make the buffalo chicken dip: In a medium mixing bowl, combine softened cream cheese, buffalo hot sauce, and ranch or blue cheese dressing. Stir until smooth. Add shredded chicken, 1/2 cup cheddar cheese, and all of the mozzarella cheese. Stir until evenly coated.
  5. Fill the pumpkin: Spoon the mixture into the hollowed pumpkin, filling about three-quarters full. Sprinkle remaining 1/2 cup cheddar cheese on top.
  6. Place the pumpkin on the prepared baking sheet. Put the lid back on slightly askew. Bake for 20-25 minutes, until dip is bubbly and cheese is melted and golden. Check doneness: pumpkin should be tender when pierced with a fork. If needed, bake 5-10 more minutes; tent with foil if top browns too quickly.
  7. Let rest for 5 minutes. Sprinkle sliced green onions on top.
  8. Serve directly from the pumpkin with tortilla chips, crackers, or sliced vegetables. Scrape softened pumpkin flesh into the dip as you eat.

Notes

Use a sugar pumpkin (not a carving pumpkin) for best texture and flavor. Room temperature cream cheese ensures a smooth dip. Always place a baking sheet under the pumpkin to catch any cheese drips. For a dairy-free version, use vegan cream cheese and shredded cheese. For extra heat, add cayenne pepper or use a hotter sauce. Leftover dip can be refrigerated for up to 3 days and reheated.
