Ingredients

Scale
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Juice of 1 lime (about 2 tablespoons)
  • Salt and black pepper to taste
  • 1/4 cup water (or reserved bean liquid)
  • 8–10 corn tortillas
  • 2 tablespoons olive oil (for brushing)
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the bat chips first. Brush each corn tortilla lightly with olive oil on both sides. Stack them up and use the bat cookie cutter to press through the stack. Place the bats on the prepared baking sheet in a single layer. Sprinkle lightly with salt.
  3. Bake the chips for 8-10 minutes until lightly browned at the edges and firm. Let them cool on the baking sheet for 5 minutes.
  4. While the chips bake, make the dip. Heat 1 tablespoon of olive oil in a small saucepan over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Transfer the garlic and oil to your food processor. Add the drained black beans, cumin, smoked paprika, chili powder, cayenne (if using), lime juice, salt, and pepper. Start the processor and drizzle in the remaining 2 tablespoons of olive oil and the water while it runs. Let it blend for a full 2 minutes until completely smooth. Scrape down the sides halfway through.
  6. Taste and adjust seasoning. Add more salt, lime, or smoked paprika as needed.
  7. Warm the dip if serving hot. Return it to the saucepan and heat over low heat for 3-4 minutes, stirring occasionally. Or serve it cold.
  8. Assemble and serve. Transfer the dip to a serving bowl. Arrange the bat chips around it, standing up if possible. Garnish with a sprinkle of smoked paprika and a few whole black beans.

Notes

For extra flavor, toast the cumin and smoked paprika in hot oil for 15 seconds before adding garlic. Let the dip rest for 10-15 minutes after blending for best flavor. The dip can be made up to 2 days ahead and refrigerated; flavors improve overnight. Bat chips are best eaten the same day but can be stored in a ziplock bag for 2-3 days; re-crisp in a 350°F oven for 3 minutes if needed.
