This Easy 5-Ingredient Crockpot Taco Soup is the ultimate dump-and-go dinner. With just five simple ingredients and a slow cooker, you can have a rich, smoky, and deeply satisfying soup that tastes like comfort without the complicated backstory.

Ingredients

Scale
  • 1 lb ground beef (or ground turkey)
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chiles
  • 2 cups beef broth (or chicken broth)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 5-7 minutes. Drain excess fat if desired.
  2. Transfer the cooked beef to a 4-6 quart crockpot.
  3. Add the taco seasoning, drained black beans, diced tomatoes with green chiles (undrained), and beef broth. Stir to combine.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  5. Taste and adjust seasoning about 10 minutes before serving. Add a squeeze of lime juice if desired.
  6. Serve hot with desired toppings such as shredded cheese, sour cream, avocado, cilantro, and crushed tortilla chips.

Notes

For best flavor, brown the meat first. Use low-sodium broth and canned goods to control salt. The soup thickens as it sits; add a splash of broth when reheating if needed. This soup tastes even better the next day.
