This creamy, tangy, and slightly spicy buffalo chicken dip comes together with just five ingredients and five minutes of prep. Perfect for game days, potlucks, or any gathering, it’s a crowd-pleaser that disappears fast.

  • 2 cups cooked, shredded chicken (rotisserie, canned, or poached)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Prepare your chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks. If using canned chicken, drain and flake. If poaching, cook chicken breasts in simmering water for 12-15 minutes, then shred while warm.
  2. Soften cream cheese: Remove from fridge 30 minutes before starting, or microwave in 10-second bursts until soft but not melted.
  3. Combine base ingredients: In a mixing bowl, mix shredded chicken, softened cream cheese, buffalo wing sauce, and ranch or blue cheese dressing until well combined (small lumps are fine).
  4. Transfer to slow cooker: Scrape mixture into a 2-6 quart crockpot and spread into an even layer.
  5. Top with cheese: Sprinkle shredded cheddar or Monterey Jack cheese evenly over the top.
  6. Cook on low: Cover and cook on low for 2 hours (or on high for 1 hour) until bubbly and cheese is melted.
  7. Stir and serve: Stir well before serving. If too thick, add a tablespoon or two of milk or extra dressing. Garnish with green onions if desired. Serve warm with chips, celery, or crackers.

Notes

For best results, shred your own cheese from a block and let cream cheese come to room temperature. If dip separates, stir vigorously. Keep warm on ‘warm’ setting for parties. Can be made ahead and refrigerated for up to 24 hours before cooking.
