  • 1 pint (480 ml) vanilla ice cream, softened

Instructions

  1. Remove the vanilla ice cream from the freezer about 5-10 minutes before assembling to soften slightly but not melt.
  2. Line a baking sheet or tray with parchment paper to catch any drips.
  3. Using an ice cream scoop or tablespoon, place about 2 tablespoons (30 grams) of ice cream onto the flat side of one chocolate chip cookie.
  4. Gently press another cookie on top, flat side down, to create a sandwich. Press lightly to spread the ice cream evenly without squeezing it out the sides.
  5. Place the assembled sandwiches on the baking sheet and freeze for at least 1 hour to firm up.
  6. Remove from the freezer about 5 minutes before serving to soften slightly.

Notes

Warm cookies slightly in the microwave for 10 seconds before assembling to avoid crumbly texture. Work quickly to prevent ice cream from melting. Wrap sandwiches individually for longer storage.
