Easy 20-Minute Garlic Green Bean Almondine Recipe

A quick and elegant French-inspired side dish featuring tender-crisp green beans, toasted almonds, and fragrant garlic in a buttery lemon sauce. Ready in just 20 minutes with one skillet and simple ingredients.

  • 1 pound (450g) fresh green beans, trimmed
  • 4–5 cloves garlic, thinly sliced
  • 3 tablespoons (42g) unsalted butter, divided
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1/3 cup (40g) slivered almonds
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the green beans: Rinse and pat dry. Trim off the stem ends, leaving the curly tails intact.
  2. Slice the garlic thinly and zest the lemon. Set zest aside and cut lemon in half for juicing.
  3. Heat a large skillet over medium-high heat. Add olive oil and 2 tablespoons of butter. Swirl until melted and foaming.
  4. Add slivered almonds to the hot butter and oil, stirring constantly. After 30 seconds, add sliced garlic. Continue stirring until almonds are light golden brown and garlic is fragrant, about 2-3 minutes.
  5. Add trimmed green beans to the skillet. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat in the butter mixture. Spread in an even layer, cover, and cook undisturbed for 3 minutes.
  6. Remove lid and increase heat to high. Toss beans and cook uncovered for 2-3 minutes, stirring occasionally, until beans are tender-crisp with some charred spots and liquid has evaporated.
  7. Remove skillet from heat. Squeeze lemon juice over beans (about 1 tablespoon) and sprinkle with lemon zest. Toss to combine. Taste and adjust seasoning as needed.
  8. Transfer to a serving platter. Dot with remaining 1 tablespoon butter if desired. Garnish with parsley and flaky sea salt. Serve hot or at room temperature.

Notes

Don’t crowd the pan—cook in batches if needed. Pat beans dry for better browning. Watch garlic carefully as it burns quickly. For make-ahead, prep ingredients up to 2 days ahead. Leftovers keep in the fridge for up to 3 days; reheat in a 350°F oven or skillet, not the microwave.
