  • 4 cups (32 fl oz) water
  • 1 cup (8 fl oz) freshly squeezed lemon juice
  • 1/2 cup (100 g) sugar or honey, adjust to taste
  • 2 cups (16 fl oz) chilled sparkling water
  • A handful of fresh mint leaves, lightly bruised (optional)
  • Ice cubes, preferably large
  • Optional garnishes: lemon slices, edible flowers (pansies or nasturtiums), fresh blueberries

Instructions

  1. Bring 4 cups (32 fl oz) of water to a boil. Remove from heat and add 1/4 cup dried butterfly pea flowers. Cover and steep for 10 minutes until the water turns deep blue.
  2. Strain the flowers out using a fine mesh strainer or cheesecloth and pour the blue tea into a pitcher. Let it cool to room temperature or chill for about 15 minutes.
  3. While the tea is still warm, stir in 1/2 cup sugar or honey until fully dissolved. Adjust sweetness to taste.
  4. Add 1 cup freshly squeezed lemon juice and stir gently. Watch the color change from deep blue to purple-pink.
  5. Just before serving, stir in 2 cups chilled sparkling water to add fizz.
  6. Add a handful of lightly bruised fresh mint leaves and plenty of ice cubes to keep the punch cold.
  7. Garnish with lemon slices, edible flowers, or fresh blueberries for a festive look.
  8. Serve immediately in clear glasses to showcase the color-changing effect.

Notes

Steep butterfly pea flowers for about 10 minutes to avoid bitterness. Use fresh lemon juice for the best color change and flavor. Stir gently to preserve fizz. Use large ice cubes to prevent dilution. Prepare tea base ahead and add lemon juice and sparkling water just before serving. Strain flowers well to avoid petals in the drink.
