  • 1 cup plain breadcrumbs
  • 2 large eggs, lightly beaten
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1/2 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup ketchup
  • 1/3 cup brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Line a 6-quart slow cooker with a 24-inch piece of parchment paper, leaving overhang for handles.
  2. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder to make the glaze. Set aside.
  3. Optional: Sauté diced onion in a skillet with a splash of oil until translucent, about 3 minutes.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, beaten eggs, onion (sautéed or raw), garlic, milk, 2 tablespoons Worcestershire sauce, salt, pepper, smoked paprika, and cayenne (if using). Mix gently with your hands until just combined.
  5. Transfer the mixture to the parchment-lined slow cooker and shape into a loaf about 8 inches long and 4 inches wide, leaving at least 1 inch of space around the edges.
  6. Spoon half of the glaze over the meatloaf and spread evenly.
  7. Cover and cook on low for 4 to 5 hours. Do not open the lid during the first 3 hours.
  8. After 3 hours, spoon the remaining glaze over the meatloaf. Cover and cook for another 1 to 2 hours.
  9. Check for doneness: internal temperature should reach 160°F. The top should be dark and sticky.
  10. Using the parchment handles, lift the meatloaf out onto a cutting board. Let rest for 10 minutes before slicing into 1-inch thick pieces. Serve warm.

Notes

For best texture, let eggs and milk come to room temperature before mixing. Don’t skip the parchment liner for easy removal. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute. Double the glaze if you love extra sauce.
