  • 1 teaspoon baking powder
  • 1 tablespoon granulated sugar

  • 1 large egg, room temperature
  • 1/2 cup (120ml) milk, whole or 2% (can use dairy-free milk)
  • 2 tablespoons finely chopped green onions
  • 3 tablespoons unsalted butter, melted, plus extra for frying
  • 2 tablespoons honey (preferably runny, floral like wildflower honey)
  • Optional: pinch of cayenne or smoked paprika for heat

Instructions

  1. Prepare the corn by cutting kernels off the cob if fresh, or thaw and drain frozen corn well (about 5 minutes).
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In a separate bowl, beat the egg with milk and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  5. Fold in corn kernels and chopped green onions carefully to avoid crushing the kernels.
  6. Heat a nonstick or cast iron skillet over medium heat and add a small pat of butter or teaspoon of neutral oil.
  7. Drop heaping tablespoons (about 2 tablespoons/30ml) of batter into the pan, spacing fritters a couple inches apart; flatten slightly with the back of a spoon.
  8. Fry for 3-4 minutes per side until golden brown and crispy, flipping carefully when edges look set and bubbles form on top.
  9. Transfer cooked fritters to a wire rack or paper towels to drain excess butter and keep warm in a low oven (around 200°F/90°C) while cooking the rest.
  10. Make honey butter by mixing 2 tablespoons softened butter with 2 tablespoons honey until smooth; microwave briefly if butter is too hard.
  11. Serve fritters warm with honey butter spooned over the top immediately.

Do not overmix the batter to keep fritters tender. Use medium heat to avoid burning or sogginess. Use a cast iron skillet for best crispy crust. Drain frozen corn well to prevent soggy batter. Keep fritters warm in a low oven while cooking the batch. Honey butter should be added while fritters are warm to melt perfectly. For a dairy-free version, substitute butter and milk with plant-based alternatives. Batter can be refrigerated for up to 2 hours but add corn and onions just before frying.
