  • 4 tbsp unsalted butter (56g), melted
  • 2 cups sharp cheddar cheese, shredded (about 200g)
  • 4 oz cream cheese, softened (113g)
  • 1/2 cup beer (120ml), preferably lager or pale ale
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: a pinch of smoked paprika

Instructions

  1. Activate the yeast: In a large bowl, combine warm water (110°F/43°C), sugar, and yeast. Stir lightly and let sit for 5-10 minutes until foamy.
  2. Mix the dough: Add flour and salt to the yeast mixture. Knead with a stand mixer dough hook or by hand for 5-7 minutes until smooth and elastic.
  3. Let it rise: Cover bowl and place in a warm spot for 45-60 minutes until dough doubles in size.
  4. Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper or silicone mat.
  5. Prepare baking soda bath: Bring 10 cups (2.4 liters) of water to a boil in a large pot. Carefully add baking soda.
  6. Shape pretzel bites: Punch down dough, roll into a 1-inch thick rope, cut into 1-inch pieces.
  7. Boil pretzel bites: Drop dough pieces into boiling baking soda water for 30 seconds. Remove with slotted spoon and place on baking sheet.
  8. Season and bake: Brush bites with melted butter, sprinkle with coarse salt, and bake for 12-15 minutes until golden and crispy.
  9. Make beer cheese dip: In a small saucepan over medium heat, combine cream cheese and beer, whisk until smooth. Stir in cheddar, Dijon mustard, garlic powder, onion powder, salt, pepper, and smoked paprika if using. Keep warm.
  10. Serve warm pretzel bites with creamy beer cheese dip.
