  • 1 tablespoon fresh dill or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. (10 minutes)
  2. In a large bowl, combine the well-drained zucchini, Parmesan cheese, flour, beaten eggs, minced garlic, parsley, chives, salt, and pepper. Stir gently until just combined. (5 minutes)
  3. Heat 2 tablespoons olive oil over medium heat in a non-stick or cast iron skillet until shimmering but not smoking. (3 minutes)
  4. Scoop about 2 tablespoons of batter per fritter and shape into small patties. Place them in the hot oil, leaving space between each. Cook for 3-4 minutes per side until deep golden brown and crispy. Work in batches if needed. (15-20 minutes)
  5. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. (1 minute)
  6. Prepare the garlic herb dipping sauce by whisking together Greek yogurt, mayonnaise, minced garlic, lemon juice, chopped dill or parsley, salt, and pepper in a small bowl. Chill until serving. (5 minutes)
