  • ¼ cup granulated sugar
  • 1 ½ teaspoons ground cinnamon

  • 1 tablespoon melted butter (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Clean and dry the pumpkin seeds: separate seeds from pulp, rinse in a colander, spread on a towel, and pat very dry. Let air dry for 10-15 minutes.
  3. In a small bowl, whisk together the granulated sugar, cinnamon, salt, and cayenne pepper (if using). Set aside.
  4. In a medium bowl, whisk the egg white until foamy and slightly frothy (about 30 seconds).
  5. Add the dried pumpkin seeds to the foamy egg white and toss until every seed is coated. Sprinkle the cinnamon sugar mixture over the seeds and toss again until evenly coated.
  6. Line a baking sheet with parchment paper or a silicone mat. Spread the coated seeds in a single, even layer, breaking up large clumps.
  7. Roast for 15 minutes, then remove the pan and stir the seeds, breaking up any clumps. Return to the oven and roast for another 15-20 minutes, until golden brown and dry to the touch.
  8. If using melted butter, transfer the hot seeds to a bowl, drizzle with butter, and toss to coat.
  9. Spread the seeds back onto the baking sheet or a cooling rack in a single layer. Let cool completely (at least 20-30 minutes) before serving or storing.
