  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup finely grated Parmesan cheese (optional)
  • 1/2 cup buffalo hot sauce (preferably Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon Worcestershire sauce (or soy sauce for vegan)
  • Ranch or blue cheese dressing for dipping
  • Fresh celery and carrot sticks
  • Chopped fresh chives or parsley for garnish

Instructions

  1. Preheat your oven to 450ยฐF (230ยฐC). Line a large baking sheet with parchment paper or a silicone mat. If you have a wire cooling rack, place it on top of the baking sheet for maximum crispiness.
  2. Wash the head of cauliflower and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth and slightly thick.
  4. In a separate shallow bowl, combine the panko breadcrumbs and grated Parmesan cheese (if using). Mix well.
  5. Working in batches, dip each floret into the batter, letting any excess drip off. Then roll it in the panko mixture, pressing gently so the crumbs stick. Place the coated florets on the prepared baking sheet or wire rack, leaving space between each piece.
  6. Bake for 15 minutes until the coating starts to turn golden and crispy.
  7. While the cauliflower bakes, make the buffalo sauce: In a small saucepan over low heat, combine the buffalo hot sauce, melted butter, honey (or maple syrup), and Worcestershire sauce. Whisk until smooth and heated through. Alternatively, microwave everything in a bowl for 30 seconds, then stir.
  8. Remove the baking sheet from the oven. Using tongs, carefully transfer the partially baked florets to a large bowl. Pour the buffalo sauce over them and toss gently until every piece is coated. Return the sauced florets to the baking sheet, spreading them out in a single layer.
  9. Bake for another 10-12 minutes, until the sauce has caramelized slightly and the edges are deep golden brown and crispy.
  10. Serve immediately. Transfer to a serving platter, drizzle with extra sauce if desired, and garnish with chopped chives or parsley. Serve hot with ranch or blue cheese dressing and fresh veggies on the side.

Notes

For ultimate crispiness, use a wire rack on the baking sheet. Don’t skip drying the cauliflower or the double-coating technique. Serve immediately for best texture. To make vegan, use almond milk, vegan butter, and omit Parmesan or use vegan alternative. For gluten-free, use gluten-free flour and panko.
