Ingredients

Scale
  • 1 medium head of cauliflower, cut into bite-sized florets (about 4 cups)
  • ½ cup all-purpose flour
  • ½ cup water
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • ⅓ cup hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon honey (optional)
  • Ranch or blue cheese dressing (for serving, optional)
  • Fresh celery sticks (for serving, optional)
  • Chopped green onions or parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower and pat it dry. Cut into bite-sized florets, about 1 to 1.5 inches each. You should have about 4 cups of florets.
  3. In a large mixing bowl, whisk together the flour, water, garlic powder, smoked paprika, salt, and black pepper until smooth. The batter should be thin, like pancake batter.
  4. In a separate shallow bowl, combine the panko breadcrumbs and olive oil. Mix with a fork until the oil is evenly distributed and the crumbs look slightly moist and clumpy.
  5. Working in batches, drop a handful of florets into the wet batter. Toss until fully coated, then let excess batter drip off. Transfer each floret to the panko bowl and roll until completely covered.
  6. Place the coated florets on the prepared baking sheet in a single layer, making sure they are not touching.
  7. Bake for 20 minutes. Remove from the oven and flip each floret using tongs.
  8. Return to the oven and bake for another 5 to 8 minutes, until the undersides are golden and the coating feels firm. Total bake time: 25 to 28 minutes.
  9. While the cauliflower bakes, make the buffalo sauce: In a small saucepan over low heat or in a microwave-safe bowl, melt the butter. Whisk in the hot sauce and honey until combined. Keep warm.
  10. Transfer the baked cauliflower to a large bowl. Pour the buffalo sauce over the top and gently toss with tongs until every piece is coated.
  11. Serve immediately, garnished with chopped green onions if desired, with ranch or blue cheese dressing and celery sticks on the side.

Notes

For best results, pat cauliflower dry before coating to avoid sogginess. The batter should be thin; do not add extra flour. Panko breadcrumbs are essential for crunch. Bake at 425°F for optimal crispiness. Flip halfway through for even browning. Serve immediately for maximum crunch. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
