  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2/3 cup water (add more if needed, a tablespoon at a time)
  • 1 tablespoon olive oil
  • 1/3 cup hot sauce (recommended: Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (or vegan butter for dairy-free)
  • 1 tablespoon honey (or maple syrup for vegan version)
  • 1 teaspoon apple cider vinegar
  • 1/4 cup panko breadcrumbs (optional, for extra crunch)
  • Ranch or blue cheese dressing for dipping (optional)
  • Celery sticks and carrot sticks (optional)
  • Fresh parsley or chives, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower head and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the water and olive oil, whisking until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the dried cauliflower florets to the batter. Use a spatula or your hands to toss them until every floret is evenly coated.
  5. Place the coated florets on the prepared baking sheet in a single layer, giving them space. If using a wire rack, place it on the baking sheet and arrange the florets on top.
  6. Bake for 15 minutes. Do not open the oven door during this time.
  7. Remove the sheet from the oven and carefully flip each floret using tongs. Bake for another 10-12 minutes, until the cauliflower is golden brown and crispy.
  8. While the cauliflower bakes, make the sauce. In a medium bowl, whisk together the hot sauce, melted butter, honey, and apple cider vinegar. Taste and adjust heat or sweetness as desired.
  9. Remove the baked cauliflower from the oven and let it cool for 2 minutes. Transfer the florets to a large bowl and pour the buffalo sauce over them. Toss gently using a spatula until every floret is coated.
  10. Optional: For extra crunch, sprinkle the sauced cauliflower with panko breadcrumbs and return to the oven for 3-5 minutes.
  11. Serve immediately. Transfer to a serving platter, garnish with fresh parsley or chives, and serve with ranch or blue cheese dressing and celery sticks on the side.

Notes

Don’t skip the cornstarch—it creates a shatteringly crisp exterior. For the crispiest results, use a wire rack on the baking sheet. If batter seems too thin, add a tablespoon of flour at a time. For best texture, serve immediately. Leftovers can be reheated in the oven at 400°F for 5-7 minutes.
