These crispy bacon-wrapped jalapeno popper bites are the perfect quick and easy appetizer, combining spicy jalapeño, cool cream cheese, and crispy bacon for an irresistible snack.

  • 68 large jalapeños
  • 8 oz cream cheese, softened
  • 1216 slices regular-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup shredded cheddar (optional)
  • 2 tablespoons chopped chives or green onions (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Wash and dry jalapeños. Slice each in half lengthwise. Use a small spoon to remove the white membranes and seeds.
  3. In a small bowl, combine softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth. If using, fold in shredded cheddar or chives.
  4. Fill each jalapeño half with the cream cheese mixture using a small spoon or piping bag.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice tightly around the middle of each stuffed jalapeño half, overlapping slightly on the bottom. Place seam-side down on the wire rack. Secure with a toothpick if needed.
  6. Bake for 20-25 minutes, until bacon is crispy and golden brown.
  7. Let cool on the rack for 5 minutes before serving.

Notes

For less heat, use larger jalapeños and remove all white membranes. Do not use thick-cut bacon; regular-cut works best. A wire rack is essential for crispy bacon. Let poppers cool for 5 minutes before serving to allow cream cheese to set.
