These crispy bacon-wrapped jalapeño poppers filled with a creamy blend of cream cheese and cheddar are a quick, easy, and crowd-pleasing appetizer perfect for parties or last-minute snacks.

  • 12 medium to large fresh jalapeños, washed and halved lengthwise
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 12 slices thick-cut bacon
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Pinch of salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Wearing gloves if sensitive, slice each jalapeño in half lengthwise and scoop out seeds and membranes unless extra heat is desired. Pat dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and black pepper. Mix until smooth and evenly blended.
  4. Spoon the cream cheese mixture generously into each jalapeño half, mounding slightly on top.
  5. Wrap each stuffed jalapeño half tightly with one slice of bacon, securing with a toothpick if needed.
  6. Arrange the poppers on the wire rack or directly on the foil-lined baking sheet. Bake for 20-25 minutes, turning halfway through if not using a rack, until bacon is crispy and filling is bubbly.
  7. Let the poppers rest for 5 minutes before serving to allow the filling to set.

Notes

Use thick-cut bacon for better crispiness and easier wrapping. Soften cream cheese before mixing for smooth filling. Use a wire rack to keep bacon crispy. Turn poppers halfway through baking if no rack is used. For extra crispiness, broil for 1-2 minutes watching closely. Remove seeds for milder heat or use mini sweet peppers as a substitute.
