  • 8 beef or pork hot dogs (thick-cut recommended)
  • 8 strips thick-cut bacon
  • 1 cup shredded sharp cheddar cheese
  • 2 fresh jalapeños, finely diced (seeds removed for milder heat)
  • 4 ounces softened cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Freshly cracked black pepper, to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Preheat grill or oven to 400°F (200°C). If baking, line a baking sheet with foil and place a wire rack on top.
  2. In a mixing bowl, combine shredded cheddar, softened cream cheese, diced jalapeños, garlic powder, onion powder, and freshly cracked black pepper. Mix well.
  3. Using a sharp knife, carefully slice a lengthwise slit down the center of each hot dog to create a pocket, without cutting all the way through.
  4. Spoon the cheese and jalapeño mixture into each hot dog slit, packing evenly but not overstuffing. Smooth the filling with the back of the spoon.
  5. Wrap one strip of bacon tightly around each stuffed hot dog, starting at one end and spiraling to the other. Tuck ends underneath to secure.
  6. Place hot dogs on the preheated grill or wire rack. Grill or bake for 20-25 minutes, turning occasionally to crisp bacon evenly on all sides.
  7. Check for doneness; bacon should be golden and crispy, cheese melted inside. Cook a few more minutes if needed, watching carefully to avoid burning.
  8. Let hot dogs rest for 2-3 minutes before serving to avoid burns from hot cheese. Serve with your favorite toppings or sides.

Notes

Use thick-cut bacon for best crispness. Remove jalapeño seeds to reduce heat. Wrap bacon tightly and tuck ends underneath to prevent unraveling. Use a wire rack when baking to keep bacon crispy. Can be cooked in an air fryer at 400°F for 12-15 minutes, turning halfway through. Store leftovers refrigerated up to 3 days; reheat in oven to maintain crispiness. Freeze uncooked wrapped hot dogs for up to 1 month.
