This recipe delivers crispy, fiery, and addictive chicken wings made in an air fryer and coated in a bold buffalo sauce. Perfect for quick weeknight meals or game day gatherings.

Ingredients

Scale
  • 2 pounds fresh or thawed chicken wings, split into drums and flats
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 tablespoons (1/4 cup) unsalted butter, melted
  • 1/2 cup Frank’s RedHot sauce
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 teaspoon honey or brown sugar
  • Celery sticks (for serving, optional)
  • Blue cheese dressing (for serving, optional)

Instructions

  1. Rinse and pat dry the chicken wings thoroughly with paper towels to remove moisture.
  2. In a large bowl, combine baking powder, salt, black pepper, garlic powder, and onion powder. Add wings and toss until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  4. Arrange wings in a single layer in the air fryer basket, leaving space between each. Cook for 12 minutes, then flip and cook an additional 12-13 minutes until golden and crispy. Cook in batches if necessary.
  5. While wings cook, melt butter in a small saucepan over low heat. Stir in hot sauce, Worcestershire sauce, and honey or brown sugar. Whisk until smooth and warm.
  6. Transfer cooked wings to a large bowl, pour buffalo sauce over, and toss gently to coat evenly.
  7. Serve immediately with celery sticks and blue cheese dressing on the side.

Notes

Pat wings dry thoroughly to ensure crispiness. Do not substitute baking powder with baking soda. Cook wings in a single layer to avoid steaming. Flip wings halfway through cooking for even browning. Serve immediately after tossing in sauce to maintain crisp texture. For extra crispiness, let wings rest uncovered on a wire rack for 5 minutes before saucing. To keep dairy-free, substitute butter with vegan butter or olive oil. Adjust sauce heat by varying hot sauce and honey amounts.
