This creamy slow cooker white chicken chili with corn is a comforting, easy weeknight dinner that tastes like it simmered all day. The secret is cream cheese, which creates a silky, velvety broth that pairs perfectly with tender chicken and sweet corn.

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 cans (4 oz each) diced green chiles
  • 2 cups (300g) frozen corn
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 3 cups (720ml) low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste (start with 1 tsp salt and ยฝ tsp pepper)
  • 8 oz (226g) cream cheese, softened and cubed
  • ยฝ cup (120ml) heavy cream
  • Fresh cilantro for garnish (optional)
  • Juice of 1 lime

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with a little salt and pepper.
  2. Place the diced onion and minced garlic in the bottom of your slow cooker. Lay the chicken breasts on top.
  3. Pour in the chicken broth, diced green chiles, cumin, chili powder, dried oregano, and an extra pinch of salt. Give everything a gentle stir.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken shreds easily with a fork.
  5. Carefully remove the chicken breasts from the slow cooker and shred with two forks.
  6. Return the shredded chicken to the slow cooker. Stir in the drained Great Northern beans and frozen corn. Cook for another 15-20 minutes on LOW.
  7. In a small bowl, microwave the cubed cream cheese for 20-30 seconds until soft. Stir it into the chili along with the heavy cream until fully melted and the broth is silky.
  8. Squeeze in the lime juice and stir. Taste and adjust salt and pepper. For a thicker chili, mash some beans against the side of the pot or use an immersion blender for a few quick pulses.
  9. Ladle into bowls and top with fresh cilantro, sour cream, or shredded cheese.

Notes

Don’t add the cream cheese too early, or it might curdle. Soften it first for a smooth texture. For a dairy-free version, use full-fat coconut cream and dairy-free cream cheese. The chili thickens as it sits; add a splash of broth when reheating.
