This creamy pumpkin spice cold brew with oat milk is a quick and easy fall drink that comes together in just five minutes. Made with simple ingredients like cold brew, oat milk, pumpkin pie spice, and maple syrup, it’s a cozy, dairy-free alternative to coffee shop pumpkin spice lattes.

Ingredients

Scale
  • 1 cup (240 ml) cold brew coffee
  • ½ cup (120 ml) unsweetened oat milk
  • 1 teaspoon pumpkin pie spice
  • 1 to 2 teaspoons maple syrup (adjust to taste)
  • ¼ teaspoon vanilla extract
  • Ice cubes (enough to fill glass halfway)
  • Optional garnish: extra pumpkin pie spice or a cinnamon stick

Instructions

  1. Fill a tall glass halfway with ice cubes.
  2. Pour 1 cup (240 ml) of cold brew coffee over the ice.
  3. In a small bowl or directly in the glass, combine 1 teaspoon pumpkin pie spice, 1 to 2 teaspoons maple syrup, and ¼ teaspoon vanilla extract. Stir until the spices are fully incorporated.
  4. Slowly pour ½ cup (120 ml) of oat milk into the glass. For a layered look, pour over the back of a spoon.
  5. Stir everything together. Taste and adjust sweetness or spice as needed.
  6. Garnish with a pinch of pumpkin pie spice or a cinnamon stick, if desired. Serve immediately.

Notes

For a smoother drink, mix the pumpkin pie spice with a tablespoon of warm water first to dissolve it before adding to the cold brew. Use full-fat or barista-style oat milk for the creamiest texture. Shake the oat milk carton well before pouring. The drink is best served immediately over ice.
