A quick, easy, and delicious high-protein breakfast that tastes like a treat. Made with simple ingredients, these creamy overnight oats are perfect for meal prep and busy mornings.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk of choice (e.g., unsweetened almond milk)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 1 scoop vanilla or unflavored protein powder
  • 2 tablespoons creamy peanut butter
  • 1–2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. In a mason jar or small bowl, whisk together the milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  2. Add the rolled oats, chia seeds, protein powder, and a pinch of sea salt to the jar. Do not add the peanut butter yet.
  3. Stir everything together until combined. The mixture will look thin and watery.
  4. Add the 2 tablespoons of peanut butter on top without stirring.
  5. Gently swirl the peanut butter through the oat mixture to create ribbons. Do not fully mix.
  6. Seal the jar tightly and refrigerate overnight or for at least 4 hours.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Drizzle with extra peanut butter and toppings if desired.

Notes

For best texture, use old-fashioned rolled oats and a protein powder that dissolves well (whey or micellar casein). The chia seeds are key for thickness. Swirling the peanut butter creates flavor pockets. Oats keep in the fridge for up to 4 days and taste even better on day two.
