  • ¼ cup (60g) Greek yogurt, plain or vanilla
  • 2 tablespoons natural peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a mixing bowl or jar using a fork until mostly smooth with some small chunks (about 1-2 minutes).
  2. Add 2 tablespoons of natural peanut butter and stir into the mashed banana until creamy and even. If peanut butter is too thick, microwave for 10 seconds to soften.
  3. Pour in ½ cup (120ml) milk and ¼ cup (60g) Greek yogurt. Add ½ teaspoon vanilla extract and a pinch of salt. Stir gently until combined and smooth.
  4. Stir in ½ cup (45g) rolled oats and 1 tablespoon chia seeds (if using). Add 1 teaspoon honey or maple syrup if desired for sweetness.
  5. Cover the bowl or jar with a lid or plastic wrap and refrigerate for at least 6 hours or overnight to soak.
  6. The next morning, stir the oats well. If too thick, add a splash of milk to loosen. If too thin, let sit another 30 minutes or add more chia seeds and stir again.
  7. Serve topped with fresh banana slices, a drizzle of peanut butter, or chopped nuts if desired. Enjoy cold or let sit at room temperature for 10 minutes for less chill.

Notes

Use ripe bananas for natural sweetness. Warm peanut butter slightly if too thick for easier mixing. Chia seeds help thicken the texture but are optional. For vegan version, use plant-based yogurt and milk, and swap honey for maple syrup. Prep the night before for best creamy texture. Can be stored refrigerated up to 4 days or frozen for longer storage.
