  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon dried sage (rubbed sage preferred)
  • 1/2 teaspoon nutmeg
  • Salt and black pepper to taste
  • 1 package (16-17 ounces) potato gnocchi (shelf-stable or refrigerated)
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 2 tablespoons fresh parsley, chopped (optional)
  • Red pepper flakes for heat (optional)

Instructions

  1. Brown the sausage: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Remove sausage from casings and add to pan. Break into bite-sized pieces and cook until browned and cooked through, about 5-7 minutes. Transfer sausage to a plate, leaving rendered fat in the pan.
  2. Sauté aromatics: Reduce heat to medium. Add diced onion to the pan and cook 2-3 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  3. Build the sauce: Pour in chicken broth and scrape up browned bits from the pan. Stir in pumpkin puree, dried sage, nutmeg, and a pinch of salt and pepper. Whisk until smooth.
  4. Cook the gnocchi: Bring sauce to a gentle simmer. Add gnocchi directly to the sauce, stirring gently. Cover and simmer 4-5 minutes, stirring once halfway, until gnocchi are tender and puffed.
  5. Add cream and sausage: Remove lid and stir in heavy cream. Return cooked sausage to the pan. Simmer uncovered 2-3 minutes until sauce thickens. Adjust seasoning to taste.
  6. Finish and serve: Remove from heat. Stir in Parmesan cheese until melted. Garnish with parsley and red pepper flakes if desired. Serve immediately with extra Parmesan.

Notes

Don’t overcook the gnocchi; they cook in the sauce in 4-5 minutes. Let the sausage get a good sear for maximum flavor. Toast fresh sage in the pan with garlic for 15 seconds before adding broth. Use a 12-inch skillet to allow gnocchi to get crispy edges. Season as you go for best flavor. Let dish rest 2 minutes before serving.
