A quick and easy no-bake cheesecake sheet dessert featuring patriotic layers of strawberries, blueberries, and creamy cheesecake filling on a graham cracker crust. Perfect for Fourth of July celebrations and summer parties.

  • 2 cups (200g) graham crackers, finely crushed
  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp granulated sugar (optional)
  • 16 oz (450g) cream cheese, softened
  • 3/4 cup (90g) powdered sugar, sifted
  • 1 cup (240ml) heavy cream, whipped to soft peaks
  • 1 tsp vanilla extract
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 1 cup (150g) blueberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the crust: In a bowl, combine crushed graham crackers, melted butter, and sugar. Mix until crumbs are evenly coated and hold together when pressed. Press firmly into the bottom of a 9×13 inch pan to form an even layer. Optionally bake at 350ยฐF (175ยฐC) for 8-10 minutes or chill in the fridge for 30 minutes to set.
  2. Make the cheesecake filling: Beat softened cream cheese with powdered sugar until smooth and creamy. Add vanilla extract. In a separate bowl, whip heavy cream to soft peaks. Gently fold whipped cream into cream cheese mixture in batches, being careful not to deflate the air.
  3. Assemble the dessert: Spread about two-thirds of the cheesecake filling evenly over the chilled crust. Smooth the top with a spatula. Arrange strawberry slices in neat rows to create the red stripes of the American flag, leaving spaces for white filling stripes. Add remaining cheesecake filling in the gaps to form white stripes.
  4. Add the blue section: Spread remaining cheesecake filling on one corner of the dessert to form the blue field of the flag. Carefully place blueberries on top to mimic the stars section.
  5. Chill: Cover dessert with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let cheesecake set.
  6. Serve: Cut into squares or rectangles ensuring each piece has part of the flag design. Garnish with fresh mint if desired and serve chilled.

Notes

If cream cheese is too cold, let it sit at room temperature for 30 minutes or microwave for 10 seconds to avoid lumps. Chill mixing bowl and beaters before whipping cream. Fold whipped cream gently into cream cheese mixture to keep texture light. Crust can be baked or chilled to set. Chill dessert at least 4 hours or overnight for best slicing. Fresh berries are preferred for topping; frozen berries should be thawed and drained.
