  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 1 cup heavy cream (240 ml)
  • ½ cup chicken broth (120 ml)
  • ½ cup sun-dried tomatoes in oil, chopped
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese (about 50 grams)
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Add chicken breasts and sear each side for 2-3 minutes until golden brown but not cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Cook for about 1-2 minutes until fragrant, stirring constantly.
  4. Pour in 1 cup heavy cream and ½ cup chicken broth into the skillet. Stir in the Parmesan cheese, allowing it to melt. Let the sauce simmer gently for 3-4 minutes until it starts to thicken slightly. Taste and adjust seasoning with salt and pepper.
  5. Place the seared chicken breasts in the slow cooker. Pour the creamy sauce evenly over the chicken.
  6. Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours, until chicken is tender and cooked through (internal temperature 165°F / 74°C). Avoid lifting the lid too often.
  7. Once done, stir the sauce gently to mix any separated cream. Garnish with fresh basil leaves before serving.

Notes

Searing the chicken before slow cooking adds flavor and texture. If the sauce is too thin after cooking, remove chicken and simmer sauce on stove to thicken. Use fresh garlic for best flavor. Adjust seasoning after sauce simmers. Avoid overcooking chicken to prevent dryness. Leftovers store well refrigerated for up to 3 days; reheat gently with added broth or cream to maintain sauce texture. Sauce and chicken can be frozen separately.
