A comforting one-pot soup with tender chicken, nutty wild rice, and a velvety cream broth. This happy accident turned into a family favorite that’s perfect for cozy nights.

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup wild rice blend
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 ยฝ pounds boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped, for garnish

Instructions

  1. Melt the butter in a large Dutch oven over medium heat.
  2. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until onions are translucent and carrots start to soften.
  3. Add the minced garlic and cook for 1 more minute.
  4. Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes.
  5. Slowly pour in the chicken broth while stirring to prevent lumps.
  6. Add the dried thyme, rosemary, and bay leaf. Stir to combine.
  7. Stir in the wild rice blend and place the chicken breasts into the pot, submerging them in the liquid.
  8. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 25-30 minutes.
  9. Remove the chicken breasts to a cutting board. Check the rice for tenderness.
  10. Shred the chicken with two forks.
  11. Return the shredded chicken to the pot and stir in the heavy cream.
  12. Simmer for 2-3 minutes until heated through. Do not boil.
  13. Remove the bay leaf. Season with salt and pepper to taste.
  14. Ladle into bowls, garnish with fresh parsley, and serve.

Notes

Use a wild rice blend for better texture. Don’t let the soup boil after adding cream to prevent curdling. The soup thickens as it sits; add extra broth when reheating. Day-old soup tastes even better.
