Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup heavy cream
  • 2 medium apples, peeled and finely diced (Honeycrisp or Granny Smith recommended)
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar (optional)
  • 1/4 teaspoon cinnamon
  • 1/2 cup caramel sauce, divided
  • 1/4 cup chopped pecans (optional)
  • Flaky sea salt (a small pinch)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before starting. If forgotten, unwrap, cut into cubes, and microwave on 50% power for 15-second intervals until soft but not warm.
  2. Prep the apples: Peel and dice apples into 1/4-inch cubes. Toss in a small bowl with lemon juice, sugar (if using), and cinnamon. Set aside.
  3. Make the cheesecake base: In a large mixing bowl, beat softened cream cheese with a hand mixer on medium speed for about 1 minute until smooth. Scrape down sides. Add powdered sugar, vanilla extract, and cinnamon. Beat on low speed first, then medium for 2 minutes until light and fluffy.
  4. Add the heavy cream: Pour in heavy cream and beat on medium-high for 1-2 minutes until the mixture is lighter and holds soft peaks. If too stiff, add another tablespoon of cream; if too loose, refrigerate for 10 minutes.
  5. Fold in the apples: Using a rubber spatula, gently fold the diced apples into the cream cheese mixture with about 8-10 strokes until evenly distributed.
  6. Layer and swirl: Spread half of the dip into a serving dish. Drizzle with about 1/4 cup of caramel sauce. Top with remaining dip, spreading gently. Drizzle the rest of the caramel sauce on top and swirl with a knife or toothpick in figure-eight motions.
  7. Add toppings and chill: Sprinkle chopped pecans (if using) and a pinch of flaky sea salt on top. Cover and refrigerate for at least 30 minutes before serving.

Notes

Don’t skip the chilling step—it firms up the dip to a scoopable consistency. For best results, use block-style cream cheese and avoid overmixing. The dip can be made up to 24 hours ahead; add nuts and extra caramel just before serving.
