Ingredients

Scale
  • 16 ounces cream cheese (two 8-ounce blocks), softened to room temperature
  • 2 cups shredded cooked chicken (about 12 ounces)
  • ¾ cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 cup blue cheese crumbles (about 4 ounces)
  • ½ cup ranch dressing
  • ¼ cup reserved pasta water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • ¼ cup sliced green onions (about 34 stalks), for garnish
  • Optional: extra hot sauce for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven. Let cream cheese soften on the counter for at least 30 minutes.
  2. Shred the chicken into small, bite-sized pieces using two forks. You should have about 2 cups. If cold, microwave for 30 seconds to take off the chill.
  3. Beat the cream cheese in a medium mixing bowl with a hand mixer on medium speed for about 2 minutes until light, fluffy, and completely smooth. Scrape down the sides halfway through.
  4. Add the hot sauce, ranch dressing, and reserved pasta water to the beaten cream cheese. Mix on low speed until just combined, about 30 seconds.
  5. Fold in the shredded chicken, garlic powder, onion powder, salt, and pepper using a rubber spatula until evenly distributed. Taste and adjust seasoning if needed.
  6. Gently fold in ¾ cup of the blue cheese crumbles, reserving the remaining ¼ cup for topping.
  7. Transfer the mixture to an oven-safe skillet or baking dish and spread into an even layer. Sprinkle the remaining ¼ cup blue cheese crumbles over the top.
  8. Bake for 20-25 minutes until bubbly around the edges and lightly golden on top. If desired, broil for 1-2 minutes for extra browning, watching carefully.
  9. Remove from the oven and let rest for 5 minutes. Sprinkle sliced green onions over the top.
  10. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Don’t skip the reserved pasta water—it keeps the dip silky smooth. Room temperature cream cheese is essential to avoid lumps. Watch the broiler carefully to prevent burning. The dip can be assembled up to 24 hours ahead and refrigerated; add 5-10 minutes to baking time. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
