  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • Salt and pepper to taste
  • 46 soft hamburger buns, toasted lightly
  • 3 cups coleslaw mix (shredded cabbage and carrots)
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey or sugar
  • Salt and pepper to taste
  • Crispy potato chips or kettle-cooked chips for serving

Instructions

  1. Finely chop the onion and green bell pepper, mince the garlic, and set aside. Toast the hamburger buns lightly on a grill pan or toaster to prevent sogginess later (approx. 5 minutes).
  2. Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  3. Add the chopped onions, green pepper, and garlic to the skillet with the beef. Cook until softened and fragrant, about 4 minutes.
  4. Stir in ketchup, mustard, Worcestershire sauce, and brown sugar. Mix well, then reduce heat to low and simmer gently for about 10 minutes, stirring occasionally until sauce thickens.
  5. Season with salt and pepper to taste, adjusting sweetness with more brown sugar if needed.
  6. While the meat simmers, combine coleslaw mix with mayonnaise, apple cider vinegar, honey, salt, and pepper in a bowl. Toss well and chill until ready to serve.
  7. Scoop generous portions of the sloppy joe mixture onto toasted buns. Serve with coleslaw and crispy potato chips immediately.

Toast buns lightly to prevent sogginess. Drain excess fat from beef to avoid greasy sloppy joes. Let sauce simmer gently to meld flavors. Prepare coleslaw dressing separately and toss just before serving to keep it crisp. Leftovers can be refrigerated for up to 3 days and reheated gently.
