  • 1 bottle (750 ml) sparkling wine or Champagne, chilled (dry Prosecco or Brut Cava recommended)
  • 1 bottle (750 ml) sparkling apple cider, chilled
  • 1 cup (240 ml) fresh apple cider (unfiltered, non-carbonated)
  • 1/4 cup (60 ml) cinnamon syrup (homemade or store-bought)
  • 2 apples (Honeycrisp or Fuji), thinly sliced
  • 1012 cinnamon sticks
  • 68 fresh rosemary sprigs
  • 68 whole star anise
  • 1/2 cup fresh or frozen cranberries
  • 1 orange, thinly sliced into rounds
  • Maple syrup, for drizzling (optional)
  • 1/4 cup pomegranate seeds (optional)
  • Fresh ginger, a few thin slices (optional)
  • Vanilla extract, a tiny splash (optional)
  • Caramel sauce, for rimming or drizzling (optional)

Instructions

  1. Make the cinnamon syrup (if making from scratch): In a small saucepan, combine 1/2 cup water, 1/2 cup granulated sugar, and 3 cinnamon sticks. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and let it simmer gently for 10 minutes. Remove from heat and let it steep for another 20 minutes. Strain out the cinnamon sticks and let the syrup cool completely. This makes about 3/4 cup.
  2. Chill everything: At least 2 hours before guests arrive, put the sparkling wine, sparkling apple cider, and fresh apple cider in the refrigerator.
  3. Prep the garnishes: Slice the apples thinly (spritz with lemon juice to prevent browning). Slice the orange into thin rounds. Rinse the rosemary and cranberries. Set everything out in small bowls.
  4. Set up the pouring station: Pour the chilled sparkling wine into one pitcher, the sparkling apple cider into another, and the fresh apple cider into a third. Place them in a line on the serving table. Put the cinnamon syrup in a small bottle or jar with a pour spout next to the pitchers.
  5. Arrange the glasses: Stack or line up 6-8 champagne flutes or wine glasses near the pouring station. Place a few cinnamon sticks in each glass beforehand.
  6. Create a sign or guide (optional): Make a little card that says ‘Build Your Mimosa: Start with 2 parts sparkling wine, 1 part apple cider, 1 part sparkling cider, and a splash of cinnamon syrup. Then add your garnishes!’
  7. Let guests go wild: Once everything is set out, guests can build their own mimosas by pouring the sparkling wine first, then the ciders, then the syrup, and adding their chosen garnishes.

Notes

For a non-alcoholic version, swap sparkling wine with sparkling water or ginger ale. The cinnamon syrup can be made up to 2 weeks ahead and stored in the refrigerator. Always pour sparkling wine first to preserve bubbles. Don’t over-garnish—stick to 2-3 garnishes per glass. For a lower-sugar version, use dry sparkling wine and reduce cinnamon syrup to 1 teaspoon per glass.
