Cozy Small-Batch Chocolate Chip Cookies: Easy One-Dish Recipe

This recipe makes exactly 4 to 6 cookies with no mixer, no chilling, and just one bowl. It’s the perfect comfort food for a quiet night in, with crispy edges and a soft, gooey center.

  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 3 tablespoons light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 large egg yolk, at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt (flaky sea salt or fine table salt)
  • 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a small baking sheet with parchment paper or a silicone mat.
  2. Place the 3 tablespoons of unsalted butter in a medium mixing bowl. Microwave in 15-second bursts until just melted. Let it cool for a minute.
  3. Add the 3 tablespoons of packed brown sugar and 2 tablespoons of granulated sugar to the melted butter. Stir vigorously with a fork for about 30 seconds until a smooth, grainy paste forms.
  4. Add the egg yolk and 1/2 teaspoon of vanilla extract. Stir until combined and glossy.
  5. Sprinkle the 1/2 cup of flour, 1/4 teaspoon of baking soda, and 1/4 teaspoon of salt over the wet mixture. Stir with a fork or spatula until just combined. The dough will be soft and slightly sticky.
  6. Fold in the 1/3 cup of semi-sweet chocolate chips with a rubber spatula. Reserve a teaspoon of chips to press onto the dough balls later if desired.
  7. Portion the dough into 4 to 6 balls. For 4 larger cookies, use about 2 tablespoons of dough each. For 6 smaller cookies, use about 1 heaping tablespoon each. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes. The edges should be golden brown and set, while the centers will still look slightly soft and puffy. For a gooey center, bake for 10 minutes; for a firmer cookie, bake for 12 minutes.
  9. Let the cookies cool on the baking sheet for 5 minutes. They will continue to set up as they cool. After 5 minutes, transfer them to a cooling rack. If you reserved any chocolate chips, gently press them into the tops of the warm cookies now.

Notes

Make sure the melted butter is just warm, not hot, to prevent cookies from spreading too much. Do not overmix the dough once flour is added. No need to chill the dough. For a sea salt finish, sprinkle a tiny pinch of flaky sea salt on top of the cookies right when they come out of the oven.
