Cozy Slow Cooker Beef Stew

A rich and tender slow cooker beef stew with carrots, potatoes, and a savory broth, perfect for a comforting homemade meal.

  • 2 lbs beef chuck roast, cut into 1 ½-inch cubes
  • 4 large carrots, peeled and sliced into thick rounds
  • 4 medium Yukon Gold or red potatoes, cut into chunks
  • 1 large yellow or white onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • ¼ cup all-purpose flour (or cornstarch/arrowroot powder for gluten-free)
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil

Instructions

  1. Pat the beef cubes dry with paper towels. Season generously with salt and pepper. Toss the beef pieces in flour until lightly coated.
  2. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Brown the beef in batches, about 3-4 minutes per side, until a deep crust forms. Transfer browned beef to the slow cooker.
  3. In the same skillet, sauté diced onions until translucent and slightly golden, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant. Scrape browned bits and add everything to the slow cooker.
  4. Add carrots and potatoes on top of the beef in the slow cooker. Stir in beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Combine gently.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is fork-tender and vegetables are cooked through.
  6. About 30 minutes before serving, taste and adjust seasoning with salt and pepper. Remove bay leaves. For thicker stew, mix 1 tablespoon flour or cornstarch with cold water and stir in; cook an additional 15 minutes.
  7. Ladle stew into bowls and serve warm with crusty bread or a green salad.

Notes

Brown the beef before slow cooking to add depth of flavor. Keep the lid closed during cooking to maintain heat. For gluten-free, substitute flour with cornstarch or arrowroot powder and use gluten-free Worcestershire sauce. If stew is too thin, thicken with a slurry of cornstarch and cold water.
