  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (freshly grated if possible)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • ½ cup unsalted butter (1 stick, cut into pieces)
  • 1 cup packed brown sugar (dark brown sugar preferred, light works too)
  • ½ cup heavy cream (room temperature)
  • 1 teaspoon vanilla extract (pure)
  • 1 teaspoon flaky sea salt (like Maldon)
  • 1 cup old-fashioned rolled oats (not quick oats)
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, cold and cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Toss in a large bowl with granulated sugar, cinnamon, nutmeg, flour, and lemon juice. Set aside.
  3. Make the salted caramel: In a medium saucepan over medium heat, melt the butter. Add brown sugar and whisk until combined and smooth, about 2 minutes. Slowly pour in heavy cream while whisking constantly. Reduce heat to low and simmer for 3-4 minutes, stirring occasionally, until thickened slightly. Remove from heat and stir in vanilla and flaky sea salt.
  4. Assemble the filling: Pour warm caramel sauce over the apples and stir gently until coated. Transfer to a greased 9×13-inch baking dish and spread evenly.
  5. Make the oat crumble: In a medium bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or fingertips, work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  6. Top the crisp: Sprinkle oat crumble evenly over the apple mixture. Do not press down. Optionally, squeeze some crumble into small clumps before scattering.
  7. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbling around edges and topping is golden brown. If topping browns too quickly, tent loosely with foil for last 10 minutes.
  8. Cool slightly: Let crisp rest on a wire rack for at least 15 minutes before serving to allow filling to set.

For best results, use a mix of tart and sweet apples. Keep butter cold for crumble. Let crisp rest before serving. Toasting oats first enhances crunch. Caramel can be made ahead and stored.
