  • 1 cup (90g) rolled old-fashioned oats
  • 1 large ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 cup (240ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash half of the banana in a medium mixing bowl with a fork until smooth, leaving a few small lumps. Save the other half for topping.
  2. Add peanut butter, milk, Greek yogurt, honey (or maple syrup), and vanilla extract to the mashed banana. Whisk until smooth and fully combined.
  3. Stir in rolled oats, chia seeds, and a pinch of salt. Mix until all oats are coated. The mixture will be thin.
  4. Divide the mixture evenly into two mason jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chopped peanuts, or other desired toppings.
  7. Enjoy cold or at room temperature.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash half the banana into the mixture for even sweetness. Let rest a full 8 hours for optimal creaminess. If too thick in the morning, stir in a splash of milk. Store sealed in fridge up to 5 days; do not freeze.
